Air dying herbs is the easiest and least expensive way to dry fresh herbs, but this slow drying process also does not deplete the berbs of thier oils. This process works best with herbs that do not have a high moisture content, like Bay, Dill, Marjoram, Oregano, Rosemary and Thyme. Moisture dense herbs work better in a dehydrator or try to freeze them. Do not use a microwave or oven to dry herbs as they demishing the oil content and flavor as they paritally cook with these methods.
HARVESTING:
Harvest herbs before flowering. Harvest all season into late summer before the weather starts to cool. The best harvest time is mid morning..
HOW TO DRY HERBS:
Cut healthy branches.
Remove any dry or diseased leaves.
Shake to remove insects.
If necessary, rinse with cool water and pat dry with paper towels. Wet herbs will mold and rot.
Remove the lower leaves along the bottom inch or so of the branch.
Bundle 4-6 branches together and tie as a bunch. String or a rubber band will work great. As the herbs dry
